Literally The Best Pancakes Ever

I love pancakes, but I've always struggled to find the perfect recipe: every one that I found was either too difficult (at this point I probably should inform you that I am a terrible cook) or it just didn't work out.


So when I finally found this fab recipe (love you Jamie) I thought I was dreaming: quick, easy and delicious!

These days I have a lot of free time though, so I thought I'd experiment with it a bit. I swapped semi-skimmed milk with almond milk, the pear with a banana, and added baking powder. The result was incredible!


Recipe:

1 cup flour
1 cup almond milk
1 egg
1 mashed banana
1 tsp baking powder
chocolate spread (to serve)

Pour all the ingredients in a mixing bowl and whisk until smooth.
Put a pan on a medium heat and add a tablespoon of extra-virgin olive oil, then once it's warm add the batter, a spoonful at a time. 
Cook each batch for 1 minute, then flip and cook for another minute (or until golden).
Serve with chocolate spread.

I love this recipe because I want my pancakes to be very fluffy and very thick, and I think the combination of banana and baking powder is perfect to achieve this result. But most of all, it is SO. EASY. Right?
